LOL, I forgot the preferred viewing order:
The original series + the animated series (rough if you're picky about animation.)
The OG movies up to Star Trek: Generations.
TNG
Now, you have options. I think Star Trek: Voyager and Deep Space Nine can work well as alternating seasons or straight-through runs. If you do end up watching them individually, I'd go Voyager first, and then break up DS9 with the TNG movies.
New Stuff:
The Chris Pine/Zach Quinto movies can be watched whenever after the above stuff. A character appears in that first movie and you'll want to be as far ahead in the original timeline as possible.
The new Trek series are all pretty great, and I think they work best kept together, regardless of release order, except for Discovery.
Star Trek: Discovery Season 1 + 2
Strange New Worlds Season 1
Picard Season 1 and 2 (and 3 if that comes out before you're done.)
Star Trek: Discovery Seasons 3 and 4 (my personal highpoint for "New Trek," excluding Strange New Worlds which feels more like Old Trek anyway.
Lastly, because the new trek gets heavy, cleanse your palate with Lower Decks. That show's continuity doesn't really affect the other shows, but it does have its own serialized progression.
